Ingredients
- 6 Yellow Potatoes
- 1 Yellow Onion
- 1 Colored Pepper
- 2 tablespoons Canola Oil
- Salt
- Pepper
Directions
- Scrub, but do not peel the potatoes.
- Chop potatoes into 1/2 inch by 1 inch pieces.
- Peel and dice onion.
- Seek and slice colored pepper into 1/2 inch pieces.
- Heat oil in a large skillet over medium-high heat.
- Once oil is hot add potatoes and cook for approximately 15 minutes stirring occasionally until they start to become tender.
- Add onions and peppers. Combine and cook an additional 10 minutes.
- Add salt and pepper to taste.
